Sweet Pickled Onions
Preparation Time: 20 minutes
Microwave Cooking Time: 15 minutes
Serves: 4 cups or 900g (2lbs)
Ingredients:
675g/ 11/2 lbs/4 cups button or pickling onions
340g/12oz/1 1/2cups light brown sugar
570m1/1 pint/2 cups cider, malt or white wine vinegar
140m1/ 1/4 a pint/ 1/2 cup water
15m1/1 tbsp mustard seed
1/2 cinnamon stick
Pinch salt
Put the onions in a large bowl and pour over enough water to cover. Cook on HIGH for 1 minute. Drain and peel the onions. Put all the remaining ingredients together in a large bowl. Cook, uncovered, for
5 minutes on HIGH, stirring frequently. When the sugar has dissolved, remove the cinnamon. Put the onions in sterilized jars or into a large glass bowl. Spoon the pickling liquid over the onions and cook a further 5 minutes on HIGH. If cooked in a bowl, spoon into sterilized jars. Seal while still warm and cover. Keep in the refrigerator.
