Stuffed Tomatoes

Microwave Cooking Time: 6 minutes
Serves: 4 people
Ingredients:
4 large ripe tomatoes
30g/loz/2 tbsps butter or margarine
1 shallot, finely chopped
225g/8oz mushrooms, finely chopped
45g l 1/2oz/l cup fresh white breadcrumbs
1 clove garlic, crushed
15m1/1 tbsp white wine
5ml/1 tsp Dijon mustard
5ml/1 tsp chopped parsley
5ml/1 tsp chopped oregano
1.25m1/ 1/4 tsp thyme
Salt and pepper
Pour 570m1/1 pint/2 cups water into a large bowl. Cover with cling film/ plastic wrap and microwave on HIGH for 5-6 minutes, or until boiling. Place 2 tomatoes in the water and let stand for 1-1 1/2 minutes. Remove the tomatoes to a bowl of cold water and peel off the skins. Repeat with the remaining 2 tomatoes. Remove the cores and cut the tops from the rounded ends. Scoop out the seeds, and strain the juice. Place the butter in a small bowl
with the shallot and cook for 1 minute on HIGH. Add the mushrooms, wine and garlic and cook for 2 minutes on HIGH. Stir the breadcrumbs, mustard, herbs, seasoning and tomato juice. Mix wall and fill the tomatoes with the mixture. Place the tomatoes in a circle in a shallow dish and place on the tops at a slight angle. Cook, uncovered, for 1-2 minutes on HIGH depending upon the ripeness of thc tomatoes. Serve hot and garnish with parsley if desired.
