Roast Fillet of Beef
Preparation Time: 15 minutes
Microwave Cooking Time: 8-11 minutes
Serves: 6 people
Ingredients:
140ml/quarter pint/half cup red wine
30ml/2tbsps red wine vinegar
45ml/3tbsps oil
5ml/1tsp each chopped taragon, thyme, rosemary and parsley
30ml/2tbsps Worcestershite sauce
450g/1lb beef fillet/beef tenderlion

Combine all the ingredients for the marinade in a small, deep bowl and cook on high for 2-3 minutes. Allow to cool completely. PLace the beef in a plastic bag or a shallow dish. Pour over the marinade and turn the beef several times to coat thoroughly. If using a bag, tie securley and place on a plate or a dish. Chill for at least 4 hours, turning the meat several times. When ready to cook, place the beef on a microwave-proof roasting rack, tucking the thinner portion of the meat slightly on the end. If desired, tie the meat at 2.5cm/1 inch interval to help keep its shape. Cover 2.5cm/1-2 inches of each end of the beef with foil. Cook on high for about 3 minutes and remove the foil from the beef. Lower the setting to medium and cook for 5-8 minutes longer, turning the beef over once. The internal temperature of the meat should register 65C/130F. Leave the meat to stand for 3 minutes before carving. Slice the meat thinly and surround with freash herbs to serve.
