Salmon Quiche
Preparation Time: 10 minutes
Microwave Cooking Time: 14 minutes
Serves: 4 people
Ingredients:
12Og/ 4oz/1 cup wholemeal/wholewheat four
Pinch of salt
60g/2oz/4 tbsps margarine
30-45ml/2-3 tbsps water
l -212g/7oz can of red salmon
150ml/5 fl. oz/ 2/3 cup natural yogurt
15ml/1 tbsp chopped dill
5ml/ 1 tsp temon juice
lOml/2 tsps tomato puree/paste
5ml/1 tsp white wine vinegar
Salt
Pepper
Garnish
Sprigs of dill
Put the flour and the salt in a mixing bowl. Rub in the margarine until the mixture resembles fine breadcrumbs. Add enough water to mix to form a wet dough. Put the pastry into a 16cm/6% inch shallow flan dish and press out to form a pie shell. Prick the base with a fork and cook, uncovered, on HIGH for 3-4 minutes. Turn every minute. Drain the salmon and discard any bones and skin. Place the salmon in a mixing bowl with the yogurt, dill, lemon juice, tomato puree/paste and vinegar and mix well. Season to taste and spread the mixture over the pie shell. Cook, uncovered, on LOW for 10 minutes until hot. Garnish with sprigs of dill.
