Orange Baked Fish

Preparation Time: 10 minutes

Microwave Cooking Time: 6-8 minutes

Serves: 4 people

Ingredients:
4 herrings
4 bay leaves
60g/2oz/4 tbsps butter
Juice and grated zest of 1/2 orange
15m1/1 tbsp chopped dill

Garnish Orange slices

Rinse the fish and dry well. Place a bay leaf inside each fish. Place each fish on a sheet of non-stick baking parchment. Put the butter in a small bowl and cook on HIGH for 15-30 seconds to soften slightly. Beat in the orange juice, zest and dill. Divide the butter into four and spread some over each of the fish. Wrap each parcel separately, making sure the fish is totally enclosed. Cook on HIGH for 6-8 minutes, until the fish is cooked, repositioning the fish halfway through the cooking time. Serve in the paper garnished with orange slices.
