Jacket Potatoes

Preparation Time: 10 minutes

Microwave Cooking Time: 16 minutes

Serves: 4 people

Ingredients:
4 medium potatoes, washed and dried
75 g (3 oz) Cheddar cheese, grated
1 tablespoon tomato puree
1 tablespoon Worcestershire sauce
15 g (2 oz) butter
Salt
Freshly ground black pepper
Chopped fresh parsley, to garnish

Suggested Fillings
Chili Beans
Blue Cheese mashed with cream
Cottage cheese and chives
Grated Cheddar and crispy bacon
Butter melted with garlis and herbs



 

Place the potatoes on a paper towel, prick them and cook for 6 minutes. Turn the potatoes over and turn the paper towel round. Cook for a further 7 minutes. Wrap each potato tightly in foil and leave to stand for 5 minutes. Cut a lengthways slice off the top of each potato. Scoop out the flesh, leaving the potato shell intact. 5. Mix the potato flesh with the cheese, tomato puree, Worcestershire sauce, butter, salt and pepper. Pile the mixture back into the potato jackets and reheat for 3 minutes. Serve garnished with parsley.
