Honey and Brandy Peaches

Serves: 6 people
Ingredients:
280ml/ 1/2 pint/1 cup water
225g/8oz/l cup honey
15m1/1 tbsp lemon juice
60m1/4 tbsps brandy
6 ripe peaches
Place the water in a large bowl and cook for 2-2 half minutes or until hot. Stir in the honey and the lemon juice and blend well. Cook for a further 2-3 minutes, stirring every 1 minute. Remove from the microwave oven and leave to stand while preparing the peaches. Pour 1150m1/2 pints/
4 cups water into a large bowl, cover and cook on high for 8-11 minutes, or until boiling. Drop in 3 peaches at a time, and leave to stand for 1-1 half minutes. Using a draining spoon, transfer the fruit to cold water. The skins should peel off easily. If not, repeat the procedure until the peaches peel easily. Repeat for the remaining 3 peaches and place all the peaches into the prepared syrup. Cover the bowl loosely and cook on medium for 7 minutes. Add the brandy and stir well. Leave the peaches to cool in the syrup. Serve warm or cold with whipped cream if desired.
