Chickpeas with Spices
Preparation Time: 15 minutes
Microwave Cooking Time: 5-6 minutes
Serves: 4-6 people
Ingredients:
30m1/2 tbsps oil
1 small onion, finely chopped
1 clove garlic, crushed
1 small piece ginger, grated
5ml/1 tsp ground coriander
5ml/1 tsp chili powder
1.25m1/ 1/4 tsp turmeric
120m1/4oz canned tomatoes, roughly chopped
1 green chili, seeded and chopped
4 cardamoms, crushed
Salt
2 sprigs fresh coriander, chopped
1 bay leaf
425g/15oz canned chickpeas
Juice of 1 lemon
Put the oil in a casserole and add the onion, garlic, ginger and ground spices. Cook 1 minute on HIGH. Add the tomatoes and juice, chilies, salt, coriander and bay leaf. Add the chickpeas and half of the liquid, salt, cardamoms and lemon juice and cover the casserole. Cook on HIGH 4-6 minutes or until completely heated through. Remove the bay leaf and serve as a side dish to other curries.
