Chicken Korma

Serves: serves 4-6 people
Ingredients:
30m1/2 tbsps oil
1 onion, sliced
2.5ml/ 1/2 tsp turmeric
5ml/1 tsp coriander
1.25m1/ 1/4a tsp cinnamon
15m1/1 tbsp flour
lkg/2 1/4 lbs chicken, shredded and boned
3 cardamoms
180m1/6 fl oz/ 3/4a cup stock
Juice of 1/2 a lemon
1 bay leaf
Salt and pepper
140m1/ 1/4 pint/ 1/2 cup yogurt
60g/2oz/ 1/2cup cashews
Heat oil for 1 minute in a casserole. Add onion, turmeric, coriander and cinnamon and cook for 2 minutes on HIGH. Stir in the flour and add the chicken, cut into 5cm/2 inch pieces, and cardamoms. Pour over the stock and the lemon juice and stir well. Cover and cook for 20 minutes on HIGH or until the chicken is tender. Stir frequently during cooking. Remove the bay leaf and stir in the yogurt and the cashews. Leave to stand for 3-5 minutes before serving.
