Cauliflower Mornay

Ingredients:
1 head cauliflower
Mornay Sauce
30g/loz/2 tbsps butter or margarine
30g/loz/2 tbsps flour
280m1/2 pint/1 cup milk
2.5ml l/2tsp Dijon mustard
60g/2oz/ 1/2cup grated Cheddar cheese
Salt and pepper
Topping
15g/Y2 oz/1 tbsp butter or margarine
45g/ 1/2oz /3 tbsps dry brown breadcrumbs
Paprika
Remove all but the very pale green leaves of the cauliflower and wash well. Shake off the excess water and wrap the whole head of cauliflower in cling film/plastic wrap. Place upside down on a plate and cook on high for 3 minutes. Turn over and cook an additional 3-4 minutes, or until the base is tender. Leave the cauliflower to stand, covered, for 3 minutes while preparing the sauce. Melt the butter for the sauce in a glass measure on high for 1 minute. Stir in the flour and gradually add the milk. Stir continuously until the mixture is smooth. Add the mustard and salt and pepper and cook on high for l/2 -2 minutes, until smooth and thick. Stir in the cheese
