Spinach and Potato Bhaji
Preparation Time: 20 minutes
Microwave Cooking Time: 11-16 minutes
Serves: 6 people
Ingredients:
30g/loz/2 tbsps butter or margarine
5ml/1 tsp chili powder
5ml/1 tsp cumin seed
5ml/1 tsp ground coriander
1.25m1/ 1/4 tsp turmeric
450g/1lb potatoes, peeled and cut into chunks
225g/8oz fresh spinach, well washed and shredded, or chopped frozen spinach
Salt
15m1/1 tbsp lemon juice
Heat the butter or margarine in a large casserole and add the chili powder, cumin seed, ground coriander and turmeric. Heat for 1-2 minutes on HIGH. Add the potatoes and stir well. Cover and cook 10-14 minutes on HIGH. Add the spinach during the last 2 minutes of cooking. Add lemon juice and salt to taste.
