Chicken and Almonds in Red Sauce

Serves: serves 4-6 people
Ingredients:
1 large onion, chopped
1 small piece ginger, chopped
1-2 cloves garlic, crushed
14m1/2 tsps cumin seeds
5ml/1 tsp coriander seeds
1.25m1/ 1/4 tsp turmeric
1.25ml/ 1/4 tsp cayenne pepper
3 red peppers, seeded and roughly chopped
30g/2 tbsps ground almonds
45m1/3 tbsps oil
280m1/ 1/2 pint/1 cup water or stock
Juice of 1 lime
5-lOml/1-2 tsps sugar
lkg/2 1/4 lbs chicken, skinned and boned and cut into 5cm/2 inch pieces

Combine the first 8 ingredients in a blender or food processor and work to a paste. Add the ground almonds and process for 1 minute. Heat a browning dish according to the manufacturer's directions and add the oil. Pour in all the paste and cook for 1-2 minutes on HIGH. Place chicken pieces in a casserole and pour over the water or stock and lime juice. Add salt, pepper, sugar to taste and stir in the red pepper paste. Cover and cook on HIGH for 15 minutes or until the chicken is tender. Allow to stand 3-5 minutes and sprinkle with the blanched almonds before serving.
